Cheesy Guacamole

The 2014 NFL Season has just begun, and tonight marks the official opening of Monday Night Football.  Football season means not only large men tackling each other, but also lots of tailgates, bbqs, and potlucks.  Translation: dips, hot wings, and fried foods– hopefully we can cover all the bases together.  Heres a quick, easy, and cheesy recipe to kick off the season: cheesy guacamole.

I love avocado, but I prefer my guacamole to be more than just mush.  I need guacamole with a spicy kick and some crunch, and why not throw some cheese in there while we’re at it.  This recipe offers a variety of flavors and textures, which is my it’s my go-to.  Guacamole is highly customizable; I so happen to love cilantro and chunky dips, so don’t let the photos throw you off if thats not your thing.  If you’re partial to another ingredient, sub it in.  If you really love an ingredient, use more of it.  The base recipe is by Alton Brown, so were already off to a good start…

Ingredients–

  • 3 ripe avocados, halved and peeled
  • 1 lime, juiced
  • 1/2 tsp kosher salt
  • 1/2 tsp ground cumin
  • 1/2 tsp cayenne
  • 1/2 medium onion, diced
  • 2 roma tomatoes, seeded and diced
  • 1 jalapeño pepper, seeded and minced
  • 1 tbsp cilantro, chopped (I added more)
  • 2 cloves of garlic, minced
  • 1 cup of grated cheddar cheese (or more)

Instructions–

  1. In a large bowl place the cooped avocado pulp, then add in lime juice to prevent browning
  2. Add in salt, cumin, and cayenne then mash with potato masher or fork
  3. Fold in onions, jalapeño, tomatoes, cilantro, garlic
  4. Fold in cheese, then taste for adjustments
  5. Cover and let sit at room temperature for 1 hour then serve
